Pressoria presents the work of the people of Champagne through an immersive and interactive scenography that engages all five senses, highlighting the region’s rich olfactory heritage. Carole Calvez's goal was to find a balance between the senses, creating an olfactory experience that connects every stage of the winemaking process — from the soil to the glass.
Context : design of the permanent exhibition space of Pressoria – The Sensory Interpretation Centre for Champagne Wines
Contribution of : Casson Mann Agency (scenography), Philéas (architecture), Eric Rodez (oenologist and winemaker), Villa Bissinger (training organization), Atelier Veroliv (interactive elements), Drôle de Trame (multimedia)

Creation of 13 scents inspired by the Champagne environment:
chalk
roots
the wine press
vine flower
Pinot Noir grape variety – at three different stages of evolution
Pinot Meunier grape variety – at three different stages of evolution
Chardonnay grape variety – at three different stages of evolution
Additional tasks carried out:
preliminary research including on-site sampling in Champagne, tasting sessions, and interviews
study of the most suitable diffusion systems
coordination with equipment suppliers
Examples of the Pressoria scenography:
The scent of chalk was designed to evoke its tactile sensation, while the scent of roots was imagined to reflect their sound.
Tables representing grape varieties are adorned with glitter reflecting the colors of the grapes (orange, red, green-yellow), and these chromatic atmospheres guided the creation of specific scents, diffused through scent bubbles integrated into the tables.
